Honeycomb toffee, also known as sponge candy or puff candy, is a light and crunchy dessert that can be made with simple ingredients. While some recipes use honey, others use corn syrup. To make the toffee, mix sugar, honey (if desired), and water in a pan and bring to a boil. Cook for 10-15 minutes until it reaches 300 F, then stir in baking soda. Pour the mixture into a lined pan and let it cool and set. Additional toppings such as melted chocolate and salt can be added before refrigerating. The toffee can be stored at room temperature for up to a week.
