Apple Cider Donut Bundt Cake
Ingredients:
- 2 ½ cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 ½ teaspoons ground cinnamon
- ½ teaspoon salt
- ¾ cup unsalted butter, softened
- 1 cup granulated sugar
- ½ cup packed light brown sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup apple cider
- ½ cup chunky applesauce
For Cinnamon-Sugar Coating:
- 1/3 cup granulated sugar
- 1 teaspoon ground cinnamon
- 2 tablespoons unsalted butter, melted
For optional Cream Cheese Frosting:
- 4 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1-2 tablespoons milk (as needed for desired consistency)
Directions:
1. Preheat your oven to 350°F (175°C). Grease and flour a 10-inch Bundt pan, ensuring it is fully coated.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, and salt. Set aside.
3. In a large mixing bowl, cream together the softened butter, granulated sugar, and light brown sugar until light and fluffy.
4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
5. Gradually add in the dry flour mixture, alternating with the apple cider. Begin and end with the dry ingredients, mixing until just incorporated.
6. Fold in the chunky applesauce until evenly distributed throughout the batter.
7. Pour the batter into the prepared Bundt pan, spreading it evenly.
8. Bake for about 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
9. While the cake is baking, prepare the cinnamon-sugar coating. In a small bowl, mix together the granulated sugar and ground cinnamon.
10. Once the cake is done and still warm, remove it from the oven and let it cool in the pan for 10 minutes. Then, invert the cake onto a wire rack to cool completely.
11. Brush the melted butter onto the cooled cake, then sprinkle the cinnamon-sugar coating all over, ensuring it sticks to the butter.
12. If desired, make the cream cheese frosting by beating the softened cream cheese, powdered sugar, and vanilla extract until smooth. Add milk as needed for desired consistency.
13. Serve the apple cider donut Bundt cake as is or with a dollop of cream cheese frosting on each slice.
